Title: Potato Skins

Just made a cookie sheet full of them, and that was our dinner while we watched football.

It was my first try, and totally spur of the moment, but darn, they were tasty!

Cheese, bacon and chives, with sour cream to dip them in.  :popcorn:

How did you make the potato skins? 

90% of the restaurants I've worked in save the baked potatoes from the day before, cut them in half, scoop out the insides and deep fry them.  The other 10% used frozen potatoes from a bag.   :hammer:

90% of the restaurants I've worked in save the baked potatoes from the day before, cut them in half, scoop out the insides and deep fry them.  The other 10% used frozen potatoes from a bag.   :hammer:

We baked the potatos whole, then cut them in half, scraped a bit of the potato out, then topped them with cheese, crumbled bacon and chives and put them back in the oven for about 10 minutes.  My daughter, the carb queen, ate the "scrapings" waiting for the skins to be done.  :-)
