My job entails work in and around email, along with actually getting my butt up from behind my desk and <gasp, horror of horrors!> actually INTERFACING WITH PEOPLE.
I get anywhere from 70-100 emails a day.
The vast majority of these are "copy all" responses made by someone who, in their retarded way of thinking, believe that everybody and his brother on that original email list needs to hear "Hey, thanks!!!!!"
Those who use the "copy all" capability on email without carefully considering why that's necessary, to whom the email response really needs to go, and why God and His Brother need to hear all about YOUR PISSY LITTLE RESPONSE need to be publicly flogged.
Grrrrrrr.

IMO, the only thing worse than accidentally hitting "reply-all" is to "reply-all" again to apologize for it.
Very rarely, I hit the "reply-all" by accident but I never hit it again to apologize for what I would hope most people recognize as a mistake.

I run in to the same thing in my department. We're adding more people since independent sites are being rolled back into the corporate organization. Every week, the boss man sends out a request asking for updates on any projects we're working on. Those dumbasses love using the 'Reply to all' button. Nobody cares... we all do the same job.

What I don't like with "reply all" is your email is being sent all over the place, an email is private in my opinion not some play thing to be spread like a VD in a LA bath house...
