So I bought some fresh beets, because I am trying to grow my horizons

and wanted to know if you guys had any good recipes...

I do different things with them, depending on size.

I do cauliflower steaks but never thought of beets, which I love.

7. Be careful if you juice them.

As far as I know, there's no danger when you cook them, but juicing can be risky if you overdo it.

Google has info.

Forget it!  Perfectly safe!  Pay no attention to this primitive!

11. My uncle made borsch when I was a kid.

I've been meaning to make it. The only thing I remember was, I said it was good while not liking it. I was that kind of kid...it was a soup served cold.

But I would like to know if it is good. I'm going to write beets on my grocery list because of you.

I'm going to write "steak" on my grocery list because of you.

Actually it's "borscht", and it's a desperation food that has saved several generations of people in socialist workers' paradises from starvation.

No American would willingly eat it, unless the alternative was a pot of NJCher's puke stew.

If Bernie beats the Hildebeast he'll have an almost unobstructed path to the White House, in which case we may all have a chance to subsist on borscht.

That's what I don't understand.  Nothing is stopping the primitives from shuffling off the decadent capitalist lifestyle they live now, and taking on a vow of poverty (and borscht).  What are they waiting for?

They don't want that lifestyle--they want everyone that they don't like to live that lifestyle.

9. You can make a nice hearty winter vegetarian stew...
 
With root veggies of many types, vegetable stock, herbs, onions, garlic, celery, golden raisins, and nuts. A dash of cayenne, chipotle, or smoked paprika is nice, too.

I did a google image search for beet stew, but found something more delectable:
