Title: Another recipe from my mothers day dinner, New Potatoes with Caper Sauce

New Potatoes with Caper Sauce

"Not your everyday potato. A tangy, rich potato dish that will steal the show."
 
PREP TIME    10 Min
COOK TIME 20 Min
READY IN    30 Min
SERVINGS & SCALING
Original recipe yield: 4 servings

     

INGREDIENTS

12 small new potatoes, scrubbed
1/2 cup butter, softened
2 tablespoons capers, drained
1 tablespoon minced green onion
1/3 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 teaspoon white wine vinegar
salt and pepper to taste


DIRECTIONS

Combine the softened butter, capers, green onion, Parmesan cheese, parsley and vinegar in a bowl. Set aside.
Bring a large pot of salted water to a boil. If potatoes are large, cut into halves or quarters. Add potatoes and cook until tender but still firm, 15 to 20 minutes. Drain.
Add the caper sauce to the pot of drained potatoes and toss gently to coat. Season to taste with salt and pepper.

Capers are one of life's passion. 

I do something similar with new potatoes and capers. 

I use sour cream, butter, capers, a splash of blasamic vinegar, and lemon or lime zest.

It is easy.  I forgot the onion, tho.  I use fine chopped green onion.

It is easy.  I forgot the onion, tho.  I use fine chopped green onion.   
forget the green onions use shalots

great roasted veggies!
lightly marinate cherry tomaoes, red pepper shalots, leek, sweet potatoe, cooking apple, in olive oil, a splash of balsamic vinager, crushed garlic and S and P. roast on a 3/4 cookie sheet with marinade poured ontop, great for a snack or with a main meal. i would reccommed steamed salmon and white rice.add some capers if you like !

Just the thought of chewing on a smelly hippie would gag a magot !
