Crab Mac-n-Cheese
1 stick (1/2 cup) butter
1 yellow (sweet) onion, chopped fine
2 tbsp all purpose flour
3 tsp salt
½ tsp dried oregano
¼ tsp dried chipotle powder (or more to taste)
1 16oz package medium shell pasta
4 cups whipping cream
3 cups milk (skim or 2%)
3 cups Sharp Tillamook Cheddar
1 cup shredded Parmesan
1 ½ cups cooked shredded Dungeness Crab meat
Begin cooking pasta according to package in a large pot
In large non-stick skillet, melt butter over med-high heat; add onion and sauté until tender.
Stir in flour, salt, oregano & chipotle powder. Cook 1-2 minutes
Stir in cream & half of sharp cheddar, stirring until cheese is melted
When pasta is cooked, drain water and return to pot. Add contents from skillet and remaining cheeses and milk. Bring to a slight boil and cook for 10 minutes, stirring constantly
Pour mac-n-cheese into roasting pan/baking pan. Fold in crab. Serve
Optional:
Melt 2 tbsp of butter in a skillet and add 1 cup of panko bread crumbs w/ 1 tsp pepper & ½ tsp Johnny’s Seafood Seasoning. Stir and top mac-n-cheese with mixture. Bake uncovered in 350 degree oven for 15 minutes or until topping browns up.
Serves 16 to 22 hungry campers
