Title: So I made Brown Rice today...
Post by: Mr Mannn on May 29, 2014, 09:25:00 PM
I never tried it before. So I put a single serving in my rice cooker, added water and set the timer.
When the timer was up, the rice was hot but barely cooked. I had to add more water and recook it again. this time it was OK, if slightly undercooked

Is that normal? Does brown rice need twice the water, and twice the time?
Brown rice is supposed to be more nutritious, but this isn't going to work for Mannn Cuisine.

Maybe this will help?

http://www.details.com/blogs/daily-details/2013/06/health-is-brown-rice-really-better-than-white-rice-myth.html

I've never eaten (or cooked) it either. I don't plan to. Wild rice is delicious, though.

That's why I don't eat brown rice.  It seems much more starchy/chewy than white rice.  I'm sure it's healthier, but it makes lousy sushi.

Try this:

1 cup of brown rice
3 cups of water
1/2 tsp salt

In the rice cooker, cook for 50 minutes. Check with a fork. If not completely tender, add 10 minutes.

Every person I've ever known (well, except for Big Dog) who ate brown has been a hippie or a vegetarian or both. They eat tofu!
An hour? For rice? Uhhh...no.

For some reason brown rice spoils all too soon.   I have a few bags of white rice that have sat unchanged for over 5 years and a bag of brown that only a year old that is spoiled.

I have yet to see an Asian eat brown rice in a meal be it  [Who Flung Dung] take out or at work.

Interesting the Yellow Rice from INDONESIA, not eaten at every meal but presented on HOLIDAYS  or special occasions.

White rice is to the Asians as bread is to the western world.    The Christian folk going into the Asian world changed the LORDS PRAYER from " give us our bread to give us our rice.

I know about the longevity of white rice. If kept sealed and free of humidity, it will last longer than I will. The survivalist in me knew about brown rice too, eat it first. It is full of oils that white rice lacks and so it spoils much quicker.

Still, seeing its much more difficult to prepare I will no longer buy it.

Just read these directions.

One cup of brown rice rinsed for 30 seconds in cold water.

12 cups of boiling water.

Add rice to water and boil uncovered for 30 minutes.

Drain and put back into same hot pan with lid.  Let set covered for 10 minutes.
Fluff with fork.

The brown rice is whole grain and the outer part is fibrous and takes longer to cook.

Way too much work for my microwave lifestyle. after I eat this crappy rice, I'm going back to white rice for good.

White rice: 15 minutes in a rice cooker is more than enough for me. If I need more vitamins...well, there a pill for that.

No tofu for this Dog!

I like brown rice with mushroom gravy, next to a big slab of roast beef, or prime rib or lamb off the grill. I also like mashed potatoes the same way. In fact, I like a lot of things next to big piles of meat!

LOL I'm with you, kid. (well, a smaller pile of meat)

Dang it! We're going to have to eat sandwiches & corn dogs & stuff this week cause there's a mountain of stuff going (I'm getting the new commode put in Thursday!) Now, I'm going to *really* suffer thinking about real food. (The dogs will still get their ground sirloin, though. The butthurt would just be too much stress to endure on top of everything else)

I no longer feel privileged.

Well, I cooked some more. I bought it, I might as well eat it.
I put 2 1/4 times the water in the cooker and let it go. Cooked longer, but I wasn't timing it.

The rice came out perfect!
So, I'll eat this batch, but after that no more brown rice for me.

I had my fling. Sure, the brown rice was exotic and new. It made promises. It whispered sweet nothings. But in the end I came back to my first love...my white rice.

Pretty much the same way I make white rice. I do let it sit and absorb the last bit of water (5-10 minutes tops) with the burner off.

Love that toasted flavor! (and, no, all you smarty pants, the toasted flavor didn't come from my burning it! )

I know this is sacrilege, but I love the brown rice---instant brown rice. We get either the boil in bags or the regular instant. It takes no longer than the white and has a nuttier flavor and seems less starchy.

But white rice is best if you have an upset stomach, easier to digest. And I don't eat tofu, hate it.

Making more brown rice tonight. I bought it, I'm gonna eat it. this is three rice dishes in a week.

Last night I thought I bought Dinty Moore beef stew...nope. It was Dinty Moore Chicken and Dumplings. My Mother made it when i was a kid, and I wasn't too impressed, But this was pretty good.

Tonight is a recipe I posted here before. 1 serving of rice, 10 oz Medium Enchilada sauce, 8 oz Sharp cheddar cheese, and a pound of ground beef. ADD the cheese last, and nuke for 3 minutes until its all melty. Then mix the whole thing thoroughly. Heaven.

I do.

Last night I forgot to defrost some meat. After reading some of the ideas, just sauteed some veggies, added some leftover plain angel hair pasta, olive oil, spices, then some fresh mozzarella cheese, shook some parmesan over it, and added melted in a few slices of provolone cheese. It was really good. I would have made it with brown rice if we didn't have the angel hair from the other night.

Now that is a meal! It's creative, only using what you have on hand, and cheese, gooey melted cheese!

Brown rice is good in stew with leftover meat or poultry.

HUNTER'S STEW

1-2 lb leftover roast beef, pork, or poultry, chopped or cubed
5 cups water
1 cup red wine
1 Tbsp Better Than Bullion Vegetable Base (or equivalent of vegetable bullion to make 3 cups)
1 onion, diced
1/2 head of celery, diced
6 carrots, diced
1/2 lb mushrooms, diced (optional)
1/2 cup brown rice
Bay leaf
1/2 tsp salt
Black pepper to taste

1. In a cast iron Dutch oven, bring water to boil.
2. Add all ingredients except pepper.
3. Reduce heat to medium.
4. Return to boil.
5. Reduce heat to low.
6. Cover and simmer for one hour, stirring occasionally.
7. Remove bay leaf. Add pepper to taste.

Serve with crusty bread, extra-sharp Cheddar cheese, and dark beer.

That sounds good.  I would probably cook white rice separate and ladle the beef stew over it, minus the cheese.

Dori,

I always include my favorite meal combinations with my recipes.

Doesn't everybody like the same things I do?

The great thing about Dog in the Kitchen recipes is that they are meant to be changed for each cook's tastes.

I'm not one of those narcissists who think they invented the "right" way to cook. I'm just a cooking dog.*

I'm weird about rice.  When I eat Chinese, I want it served with fried rice, not the white rice or those noodles.
