Have you tried Tout Almandine?
For 4 servings
4 trout fillets
flour for dusting
1 stick of butter
2/3 C slivered almonds
a tablespoon or so of fresh lemon juice
salt as desired
Melt the stick of butter in pan until melted and barely
bubbling..
dust the fillets with flour, shake off excess. Let rest while you
put almonds in butter and lightly fry both sides. Remove nuts,
put fillets in, squeeze lemon juice over fish, cook until light
brown, put nuts back in and heat thru.
Serve fillets with the nuts and butter covering the fish. Takes
longer to read this recipe than to cook...fish cooks quickly, but
keep the heat medium.
This was the recipe i was looking for. I had forgot exactly how, found it. Pan fry is the best. We have a creek in the front yard and back yard. Trout mmmmmm
