poll: differences in poultry

I really don't know, but now Grandma's bonfires on Skins's island got me wondering.

Is there a difference in taste, between meat from a rooster, and meat from a hen?

Yeah, yeah, I know.  I grew up in agricultural areas, and should know this stuff.

But being a town lad, there was a lot I missed out on learning.

I dunno either Frank.  I've never tried rooster meat. [that I know of]

I don't think there is technically...it's just that roosters aren't usually harvested (or whatever it's called)...because they are needed to fertilize the eggs....
Just hand over the chocolate...back away slowly...far away....and you won't get hurt....

I suspect that the difference might be more the age of the bird when slaughtered than any real difference in meat quality.  Most of the meat we buy from the supermarket is from young birds with tender flesh.  A rooster would be more likely to be slaughtered when significantly older, and therefore would have tougher meat, thus moister preparation methods.  I assume that an old hen and an old rooster would be about equally tough.

I don't think many roosters are kept for chick-making.  One rooster is sufficient for many hens...and if you're after eggs, you don't want any rooster.  Most male chickens are killed young, and their meat tastes about the same as any young females.  Some are castrated, creating capons, for even better tasting meat.

I think they do. I had the chance to "cull" some roosters that a friend got (as chicks, he needed hens), he just had too many, and I thought they were tougher, and tasted slightly "gamy". They were about 6 months old.

I am with you on this, stringy and a bit gamy but I was just a kid when we lived on the farm.  Seems to me mom use to stew them.  Stewed chicken ended up being canned in a quart mason jar.   Chicken is not my most favorite food but I will eat it.
