Title: Cincinatti "Skyline" Chili

Ingredients
2 lbs of Beef
1/2 cup of chopped onions
1 tablespoon of vegetable oil
1/2 pound of spaghetti noodles
1/4 cup chili powder
1 teaspoon ground cinnamon
1 teaspoon cumin
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 bay leaf
1 ounce unsweetened chocolate
10 ounce beef broth (Stores usually only carry 15oz which is ok to add it all in.)
15 ounce plain tomato sauce
2 tablespoons cider vinegar
1/4 teaspoon ground cayenne pepper (If you don't want it too spicy you can do 1/8 teaspoon. You'll get a tingle but you'll still get the flavor.)
cheddar cheese to top

1. Heat oil in a large sauce pan, cook onions for 6 minutes to translucent

2. Add beef and cook until brown, drain grease

3. Add everything else in and stir until everything is smooth and not chunky. (I like to add my mixes into like a bowl mix them altogether so its even when I pour it in.)

4. Simmer for hour and a half and then remove the bay leaf before serving.

5. After about an hour of simmering begin boiling water in a separate pot for your spaghetti so it is ready for the chili. (I like to break my noodle in half before putting them in. Makes it easier to serve.)

Serving Options

Chili 1 way: Chili by itself

Chili 2 way: Chili with cheese or noodles

Chili 3 way: Chili with cheese and noodles

Chili 4 way: Chili with cheese, noodles and raw onions on it

Chili 5 way: Chili with cheese noodles, raw onions and red beans. (I haven't done it with beans yet, but it is good either way.)


Made this for my Dad last time I visited and promised him I'd post it here. Made it for all my college friends last week and everyone loved it, the pastor and music director had some as well and they liked it.

Darn that sounds like a lot of work for a one time hour meal.    All those spices that one may never use in another 6 months,

Perhaps after Divinity College you could head for Chiefs school, seems like you could combine the preaching and cooking all together.     You seem to have multi talents that can be brought together, may in the future get a TV program as  " Food for the sole"   you never know where the love of God Will take you.  

You have to remember that spices are very expensive , and used seldom in day to day cooking.    Jump in there and find recipies that for food that the people you minister have on hand , salt and pepper.    You can do it, when you get to the Latino areas, now is the fun to figure out how to cook beans, rice and hot peppers with other meats that will feed the people for little price.

As a minister to others and a teacher of how to feed themselves, what more can a worker of God do ?????

I went to college near Cincinnati . . . Skyline chili had a franchise in my college town.  I remember walking in to see what they had, turning green and running out!  I may be from NJ but even I know THIS AIN'T CHILI!!   :panic:

Um, Vesta? The spices mentioned are pretty common. I have all of them in my spice cabinet and they are replaced when used up. All of them - except the allspice - can be purchased at Dollar Tree or Big Lots.

There is so little allspice in this recipe that it could be deleted and increase the cinnamon and clove a wee bit. Won't be exactly identical but not changed enough to notice - especially if one has never had Skyline Chili.

If you don't have unsweetened chocolate in your cabinet ( I think there are probably 4 or 5 BOXES of it in mine  :-)  ) you could use some cocoa powder (not hot chocolate mix) and a tablespoon of butter, or for that matter use an ounce of a dark chocolate Hershey bar and eat the rest of it (not something I would EVER consider  :lmao:  ).

Most recipes can be adapted to more "affordable" or "accessible" ingredients. Might not get the same flavors, but doesn't mean it can't be quite tasty.

Cooking is chemistry. You mix stuff up and see what happens. Sometimes it's awesome. Sometimes it's tolerable. Sometimes it flat out sucks. But oh what fun it is to experiment!  :yahoo:

I like Skyline Chili - especially on all beef hot dogs with cheese and onions! :drool: I buy it canned at the grocery and keep it in the cabinet when my "Cincy born and lived there 45 yrs" Other Half needs a Skyline "fix"! It's not as good as the made from scratch fresh, but it's more than acceptable. The frozen is better for on pasta or by itself in a bowl(my least favorite way to eat it).

The thing to remember when eating Skyline Chili is to not think of it as "chili". Think of it as more a hot dog/pasta sauce.

We were doing a job in .... Indiana if I remember correctly, and I walked into a Skyline 'chili' restaurant.  They asked me what I wanted and I said chili.  Little did I know what I would be receiving!

They handed me a bowl of this ..... filthy, vile, disgusting, horrible stuff that had noodles in it!  I said WHAT is this??  She told me it was chili .... If I weren't such a gentleman I would have beat her down on the spot.

I told them all I wanted was some chili.  They didn't HAVE any!

I left.  Immediately.

cinnamon?  spaghetti?  Really??

It's sucks even as hotdog sauce. Dq is closer to what should be on hotdogs. As for pasta sauce. Ummm no. There is nothing in skyline chili I like. I've live in oh 12 years and went in two times: once to taste and them back 5 years later to use a coupon one of the kids had. Can't even stand the smell. Gross my ex who is from here loves it. Ugh nasty.

I think that's a myth, but I don't know for sure.  

I wouldn't try it expecting Texas-class chili.  In a pinch, it's better than Hormel from the can, but you have to ask for the chili-sauce packet to put in it.

See I actually wanted to learn this recipe for my Dad, because I knew how much he likes Skyline chili. He hasn't had it in years and I just wanted to make it for him. Here you all are bashing it. Shameful display, for shame.

Vietti is a local company that makes a "chili sauce".  It's great for nachos, burgers, hot dogs, and pretty much everything else.

Beans DO NOT belong in chili.

Neither do rice or corn bread!!

Corn bread goes on the side. With green chilis and cheddar cheese in it....maybe a small can of creamed corn.

Only things that should be allowed to add to the bowl of chili is sour cream and shredded cheese. I prefer a combo of colby & monterey jack.  :-)

I put one onion in per pound of ground beef when I make it. I never think to add extra, though I like it that way when it's available.

lots of people here, do put it IN the chili....they either break it up in the bowl and pour the chili over it. Or crumble it in on top.

I've done it too.... but only when it couldn't possibly make the chili taste any worse! I was in a social situation where I had to eat it and it was the only way to get it down. Not only did it have more beans than anything else, but there were 3 different kinds of the nasty things!!!!  :puke:

See I actually wanted to learn this recipe for my Dad, because I knew how much he likes Skyline chili. He hasn't had it in years and I just wanted to make it for him. Here you all are bashing it. Shameful display, for shame.

Hey, I wouldn't classify Skyline chili as "true" chili, but I've had it before, and I liked it for the unique flavor.  Not something I'll eat every day, but if I ever get some packages of the spice mix again I might do it.

And cornbread on "real" chili only goes on the side.  Buttered and with syrup or honey.  Failing that, sopapillas.

Take that, Tex-ASS.  STFU before I divide Alaska in two and make Texas the THIRD-largest state.  You idiots would probably try to roll haddock in cornmeal and deep fry it.

We're not Neanderthals Yankee boy. Everyone knows haddock requires refined flour and an egg wash. Chicken fried haddock is on all the menus.

Cornbread is to be made in a heavy cast-iron skillet slathered in either bacon fat or hog lard. Don't matter if you add sugar, honey, Jalepinos, whatever...   it just ain't the same baked in anything else.    :drool:    :yum:    :-)

As an aside, the term "cornpone"  is a reference to a "pone" of "corn"bread, always baked in said bacon-grease.-slathered cast-iron skillet.
