Egg Salad?

I had a dozen eggs that expired october 15, so i figured I should hard boil them and make egg salad.

I put them in a pot of cold water, three eggs popped to the top (floaters) so pulled those out and tossed them. Brought the water to a good boil, covered, and turned off the heat. I have them sitting in the hot water now with a timer set for 20 min.

Any good ideas for egg salad? I don't like crunchy bits in mine, so I usually just add mayo and some dijon, salt, pepper, paprika.. If i had them, maybe some grated carrot for color, but don't have any carrots.

I usually take half the yolks, mash them up and mix in the gooey stuff, then chop the other half of the yolks, and all the whites up, and fold in the gooey yolk mixture.

Why would one discard floating eggs that are boiling?

These were floating in the cold water before I turned on the heat. Since they are two weeks past their date, I figured why take a chance? The whole dozen was destined to be thrown out anyway.

The lesson is, if you don't conform to the behavior of the majority of eggs, you are likely to get culled.  :p

I have some green cocktail olives with pimento... might chop up some of those and add them.

I didn't mean to threadjack, crockspot, sir, but I was puzzled.

As for your recipe, it sounds pretty much like what makes great egg salad.

Although I'd put heaps of salt and pepper on it, myself.

I put chopped up pickle, mayo, mustard and salt and pepper in mine.   Then to eat it, I make a sandwhich on toasted wheat bread.  Yum.

Chopped eggs, real mayonnaise, a bit of finely chopped onion, spicy mustard, salt and pepper, maybe a bit of Emeril's original.
Just hand over the chocolate...back away slowly...far away....and you won't get hurt....

Frank, the floating egg trick is a good one. I've checked "floaters" and yup, they were bad.

also in tuna salad. use it instead of pickles and add lemon pepper. great when putting on plate of lettuce or in a tomato.
