Title: Killer (in more ways than one) french fries.

I found this reciepe on the web, but can't remember exactly where. However, it's so simple I've got it memorized, and it's much eaiser than "pomme frites" with more consistant results.

Yes, they start out in cold oil.

5-6 russet potatos unpeeled and cut into 1/4" strips.
Rinse in water until the water runs clear (no starch)
Soak the strips in ice water for about 1 hour.
When ready, pat the strips dry and add to a large pan, preferably deep sided.
Add veg oil until covered. Put on a med high burner and let it come up to frying temp.
Let cook until golden brown, turning a couple of times.
When done remove to a plate with paper towels to soak up any excess oil. Salt while hot.

Pig out.  :drool:

Trying to figure out the cold oil angle.

The whole idea of heating oil first, then allowing food to hit the hot oil (thereby reducing the temp quite a bit), then as quickly as possible coming back up to temp, is to keep the oil from soaking into the food.

That tends to happen more when food and oil are cold.

Got any insight on this, wineslob  :???:

None, but it works, and the fries are tha bomb. I thought the same thing.....WTF...........till I tried it.
