Dan Dan Noodles

I have finally perfected one of my favorites I used to get at Little Shanhai in Santa Cruz, CA. It's not exactly the same, but close enough to satisfy me. Amounts mentioned are to feed one hungry bachelor.

Ingredients:

Pasta (Spaghetti, or whatever you want)
Broccoli
Green onions
Peanut butter
Rice vinegar
Sesame oil
Soy sauce
chicken stock or just hot water works
sugar
garlic powder

Put pasta on to boil
stir together 2 tbs peanut butter, 1 tsp sesame oil, 2 tsp rice vinegar, 2 tsp soy sauce, and a shake of garlic powder until well blended.
add suger to taste (1 tsp or more)
thin with hot water or chicken stock.

About four or five minutes before the pasta is done, throw cut up broccoli into the water with the pasta. This is one case where I like to overcook the pasta by a minute or so.

Drain pasta/broccoli, put in bowl, pour over peanut sauce mixture, and toss until pasta is well coated with peanutty goodness.

Top with chopped green onions.

Yum.

That would be killer with some peeled shrimp. I'm gonna try it.

Sounds like it would be good with some Lo Mein noodles instead of spaghetti.

The ones at Pei Wei are decent. I get shrimp and beef and usually throw in 3 spoons of chili paste to get it right.
