Title: Southwestern Potato Salad

Southwestern Potato Salad
Bold American Food by Bobby Flay

1 cup mayonnaise
1/4 cup Dijon Mustard
2 Tbs fresh lime juice
1 medium tomato, chopped
2 Tbs chopped cilantro
1/2 jalapeno, finely diced (remove the ribs and seeds if you don"t want it so spicy)
2 scallions, chopped, white and green parts
1/2 medium red onion, thinly sliced
1/2 small garlic clove
Salt and freshly ground black pepper to taste
2lbs new potatoes, cooked, drained, and cut 1/2" thick

With a spatula, combine the mayonnaise and Dijon with the remaining ingredients and mix well.  Pour over the warm potatoes

So you like chunky tater salad?  I do.  This one sounds pea-pickin' good.

We have an upcoming annual event where my wife usually brings the potato salad.  Of course, she lives in San Antonio and won't be going, so I may try this one and surprise the family.
