Darn that sounds like a lot of work for a one time hour meal. All those spices that one may never use in another 6 months,
You have to remember that spices are very expensive , and used seldom in day to day cooking.
Um, Vesta? The spices mentioned are pretty common. I have all of them in my spice cabinet and they are replaced when used up. All of them - except the allspice - can be purchased at Dollar Tree or Big Lots.
There is so little allspice in this recipe that it could be deleted and increase the cinnamon and clove a wee bit. Won't be
exactly identical but not changed enough to notice - especially if one has never had Skyline Chili.
If you don't have unsweetened chocolate in your cabinet ( I think there are probably 4 or 5 BOXES of it in mine
) you could use some cocoa powder (not hot chocolate mix) and a tablespoon of butter, or for that matter use an ounce of a dark chocolate Hershey bar and eat the rest of it (not something I would EVER consider
).
Most recipes can be adapted to more "affordable" or "accessible" ingredients. Might not get the same flavors, but doesn't mean it can't be quite tasty.
Cooking is chemistry. You mix stuff up and see what happens. Sometimes it's awesome. Sometimes it's tolerable. Sometimes it flat out sucks. But oh what fun it is to experiment!

I like Skyline Chili - especially on all beef hot dogs with cheese and onions!
I buy it canned at the grocery and keep it in the cabinet when my "Cincy born and lived there 45 yrs" Other Half needs a Skyline "fix"! It's not as good as the made from scratch fresh, but it's more than acceptable. The frozen is better for on pasta or by itself in a bowl(my least favorite way to eat it).
The thing to remember when eating Skyline Chili is to not think of it as "chili". Think of it as more a hot dog/pasta sauce.
