The Chili of Manliness(Big Dog's All-purpose Crock-pot Chili)
Ingredients:
1 lb dry pinto beans
1 yellow onion
2 large (28 oz) cans diced or crushed tomatoes
32 oz V-8 juice
1 bunch fresh cilantro
1 tbsp minced garlic (or 6 cloves, minced)
1-2 tbsp Chipotle chili powder
1-2 tbsp cumin
1/2 cup salt- to soak beans
2 tsp salt (I like the taste of sea salt)
1 tsp black pepper (I grind mine fresh, but you don't have to)
Meat (Cook specifically for the chili, or use leftovers from another Manliness meal):
2 lb of any one or more-
Cooked ground beef
Smoked beef brisket
Smoked sausage
Summer sausage
Smoked pork
Smoked turkey
Roast beef
Roast pork
Leftover Thanksgiving turkey
Cooking instructions:
1. Rinse pinto beans. In crock pot, place beans and 1/2 cup salt. Add water to fill crock pot 3/4 full. Cover and set aside for 24 hours. After 24 hours, drain and rinse. Return beans to the pot.
2. Dice onion. Add to pot.
3. Rinse cilantro under cold water. Cut leafy ends from the stems, dice and add to pot.
4. Cut meat into small pieces. Add to pot.
5. Add garlic, salt, chili powder, cumin, and black pepper to pot.
6. Add canned tomatoes to pot.
7. Add V-8 juice to pot. Stir.
8. Set crock-pot on "high", cover, and cook for 8 hours. Stir every 2 hours.
Serve with shredded sharp or extra-sharp Cheddar cheese, tortillas or tortilla chips, and cold beer.
Leftovers will taste better the second day!
