I am smoking four pounds of cheese on this moonless night, with a Simply Smoke tube and my Green Mountain Grill. In the smoke are two blocks of Muenster, and two of Mozzarella.
Why at night, you ask? To keep the temperature inside the smoker below 80 degrees, so the cheese won't sweat or melt.

My brother got hold of some smoked cheese and used it for one of his menu items. It was pecan-smoked Gouda on a Mortadella sandwich. Good stuff.

I'm curious about the smoker tubes. Do they burn on their own? Pellets or chips? I have an Oklahoma Joes charcoal smoker and would like to get into cold smoking.

The tube uses pellets. You fill the tube, and light the pellets at the open end. I user a propane torch to get a good head of coals going.
The tube I have burns about 3 hours.

I remember on trips to WI purchasing freshly smoked mozzarella string cheese.

I have a Simple Smoke tube, which I got from my local Green Mountain Grill dealer. I don't see a website for the tubes.

Thanks I just ordered the 12" combo with 4 2lb bags of pellets and a torch for $59.99 free shipping. Not bad! Got the torch so I don't have to dig mine out the work truck and didn't think I would like the gel starter.
