Made a couple dozen worth of these last night. Oh, my.
1 dozen hardboiled eggs, shelled and split in half, yolks removed
8 oz. lump crabmeat, cleaned of shells and ligaments (don’t use the canned if you can avoid it)
1 tbsp minced capers
2 tbsp caper juice
1 tsp finely chopped garlic
¼ cup mayonnaise
1 tbsp Dijon mustard
Salt and pepper to taste
Mix yolks with all remaining ingredients in bowl, scoop into egg white, top with garnish.
