Ah, fall in New England. Cheap lobster. Yum.
Meat of one lobster, chopped into bite sized bits
2 tbsp butter
1 garlic clove finely minced
1/4 cup breadcrumbs or crushed crackers
1/4 cup monterey jack cheese
1 additional tbsp butter
melt butter in saucepan with garlic, do not allow to brown. Meanwhile, in casserole dish, arrange lobster in a single layer. Top with melted butter/garlic mixture. Top with breadcrumbs, then cheese, and dot with remaining tbsp of butter. Place in preheated 400 deg F oven for 15 minutes or until cheese melted.
That and a nice salad oughta do the trick on a day like today.
