Mercy! Well Stocked For Turkeys ...

If anyone is having difficulty purchasing them in your area of the country ...   

Mr. ABC, being the man of the house, (who loves to eat)   went out himself and bought 2 of them just in case we, also should have problems as well.

One for Thanksgiving & one for Christmas.  There are only two of us in this household  for crying out loud  :argh:   as  son & family are not coming to visit this year ...

So ... am willing to send anyone a goodly portion of any left overs (and there will be some, believe me) even after sandwitches the next day, plus freezing some for a pot pie for the two of us later!   :rotf:

Mrs E and I are also well stocked. I bought a 12.5 lb. turkey, but we're not going to use it this year. Instead, we are going to first brine a bone-in turkey breast and roast it on top of what promises to be a killer dressing.

Ciabatta bread, Italian sausage, mirepoix, fresh sage and thyme, along with home-made chicken stock (I make it every week at minimum) - no eggs.

We may donate the whole turkey to a food pantry.

In classic French cooking, mirepoix is carrots, onions, and celery. In Cajun cooking, substitute (green) bell pepper for the carrots. They call it the "trinity."

I offer to fry  turkeys for people each year and have fried as many as 5 in a day. It’sa good time.

My goodness, you are a man of many talents.  Not only a musician, but also familiar with making both French & Italian cuisine!

Tell me, is it possible for me to hire you for my next dinner party for 8 people (whenever that will be allowed to happen this winter, that is!)    :rotf:

Super easy to do.  The main thing is to make sure the turkey is completely thawed.  Inject it with whatever you prefer, rub it down with mustard and a decent rub, put it in 350 degree oil for 3 minutes per pound, take it out and cover it with a hand towel to cool off a bit, then slice it up!

12# turkey is done in 36 minutes.  Pretty slick.  Very moist.

Well, I used to cook for a living but I wouldn't call it anything special. Meat 'n spuds more than anything. Mrs. E says I cook a killer breakfast.

Full disclosure -- Mrs. E copied the recipe off the America's Test Kitchen cable show. One of the blonde hostesses on the show walked through how to do the turkey and dressing and I thought it would work well for us. One of the things that Alton Brown is famous for is his condemnation of "gloppy" turkey dressing -- and while I agree wholeheartedly with him, his recipe for dressing tends to be on the ostentatious side. One ingredient that leads to "gloppiness" is eggs in dressing. This recipe omits eggs, and I can see how this would work very well.

I like the KISS principle. Kinda goes with the meat 'n spuds concept.  :-)

I'm afraid dinner parties are way beyond my skill set. No way in hell would I prepare 62 trays of different Hors d'oeuvres. I have absolutely no patience for that kind of thing.

One of these days I'm gonna break down and smoke a turkey. Never have fried one, but I've seen it done.
