Something I made tonight

Take 1½ sweet potatoes and dice, boil until somewhat soft.(Don't let them get too soft or mushy).  Drain & set aside. Take one med. onion, diced and saute in Olive oil. Salt to draw out the moisture. After they get clear, add in 1 Lb. hamburger meat and a little more salt and garlic. Cook thoroughly and then drain. Take one 15 oz can of diced tomatoes and drain, add into cooked hamburger meat. add in cooked sweet potatoes. Set mixture aside and let cool. take pre-made pie crust (the rolled up kind) and cut in half. Place amount of filling and seal. Brush with an eggwash and cook for 20 mins in 375°F oven (or until brown) I think that there's enough filling to make 6 of these maybe more. You can add cheese if you like. Cheddar cheese kind of faded into the mixture and really didn't add much. Moz might work better.

Just something different to do with hamburger. They weren't exceptional, just pretty good.
