Orange Gingered Carrots and Asparagus

Carrots - cut into about 1" pieces
Asparagus - cut into about 1" pieces
Ginger - about a 1/4" piece of fresh ginger grated
1 Orange
Butter
Salt & Pepper
Chicken Broth or Water if needed

Melt about 2 T butter and saute carrots for a couple of minutes, add asparagus.  Add grated ginger and squeeze the juice of the orange and begin a low simmer.  Add salt and pepper to taste.  Simmer slow & low until just tender.  If needed add a small amount of chicken broth or water to keep from drying or burning.

Add about a teaspoon of fresh grated orange zest too.

Great recipe.  Even veggie haters will eat their veggies.

Sounds interesting....I'll have to try it when I find asparagus on sale!

Thanks,  I tried it with the orange zest last night and loved it.  Embarrassed to say, I just got some little hand graters so I haven't been using zest a lot.  ok, I'm hooked now  :cheersmate:

Speaking of Asparagus ..... I have a hard time with fresh vegetables.  Number 1, I hate to hit the grocery store frequently and if I get enough to last a couple of weeks, of course, it doesn't last (though those silly little green bags are actually working!)  I look for decent quality flash frozen.  If you've got a Kroger, their Prime Select Brand steamers/frozen asparagus is very very good ... so are their artichoke hearts.  I've found them to be better tasting than some of the "fresh" that comes in here and, definitely better than canned.  They are great for the "always have it on hand" frozen things.  Schwans delivery asparagus is also up there on my rating list, in fact, my first choice.
