For one 9.5 by 5 inch loaf pan you will need:
1 pkg (10 oz) frozen sliced strawberries
2 eggs
1/2 cup vegetable oil
1 cup sugar
2 cups all-purpose flour
1 1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/2 tsp salt
3/4 cup chopped walnuts or pecans
Defrost berries according to package directions.
Beat eggs until fluffy. Add oil, sugar and berries, beating until light.
Mix flour, cinnamon, baking powder, baking soda, nutmeg and salt. Blend flour mixture into strawberry mixture just until flour is moistened. Do not overmix. Stir in nuts. Pour into greased pan.
Bake at 350 degrees for 50 to 60 minutes, or until tester inserted in center comes out clean. Cool 5 minutes. Remove from pan. Finish cooling on rack.
Notes: I prefer pecans to walnuts, but it's all good. As for the spice measurements, I ALWAYS use three to four times as much as the recipe calls for. Consequently, my latest batch of this bread tasted like a Strawberry Nutmeg Pecan bread. :drool:

Actually, whiffleball, it does indeed freeze well!
I am not sure for how long though, as mine tend to get eaten within the month even if they go in the freezer.

Oooo, I just remembered that I have fresh frozen strawberries from last month that were totally out of this world sweet. Guess where they'll be going next week? I'll drop by and let you know how the bread came out and how long it lasted.

As for me, we have three rather brown bananas sitting on the counter just begging me to make banana pecan bread for breakfast manana. Or, rather, hubby was begging. I will have to make him pay............ :naughty:
