Title: Pollo Relleno

Found this a while back, made it again last night...oh, man.

I've set this up to make 8 servings.  I usually only make 4, but do as you will.

2 lbs (4 breasts) chicken, cut in half
1 package taco mix
1/3 cup cornmeal
1-6oz can green chiles (chopped or whole)--I found chopped works better
8 oz jack or mexican "mix" cheese--again, grated works better
2 tbsp fresh cilantro, chopped

Preheat oven to 350.

Mix together taco mix and cornmeal.

Using meat mallet, pound chicken breasts until they are less than 1/4" thick.  On each piece of chicken, place on cilantro, chiles, and cheese.  Roll up breasts and pin with toothpick.  Roll breasts in cornmeal/taco mix until well coated.

Place chicken breasts on cookie sheet or baking pan and bake for 30-35 minutes, or until internal temp is 165 degrees.

My particular favorite is just Mexican rice.  Keep it simple.

Will definitely have to try that. I've made something sort of similar, but not quite the same. Have you ever tried to do that with beef?

But yeah, I am going to try this.

Different ingredients, same principle.

On the boats, we called beef rollups or beef cordon bleu "cat turds".  I'll leave it to your imagination to wonder why.
