Well, now, I was told in such cases, you should keep firing until you run out of bullets. Is that not correct? If it is, is the idea that you don't want someone taking your gun and shooting you with it?

It depends on who is teaching. I learned that Its not neccesarily the best to shoot all your rounds at once. You never know how many potential targets you may have to deal with.
