I thought I would experiment a bit this evening.
My wife was in the mood for a salty sweet snack.
I had some store bought cashews handy and a bottle of smucker's sugar free carmel syrup.
I toasted about a cup of cashews and about 1.5 teaspoons of cinnamon in a non-stick pan over medium-high heat for about 90 seconds or so. Just enough time for the heat to start releasing the oil from the nuts for the cinnamon to adhere to. I removed the pan from the heat and drizzled in about 2 tablespoons of sugar free carmel syrup. I mixed it all well together, then broiled it in the the oven on parchment paper (cookie sheet underneath) for about 2 minutes.
Keep a close eye on it while broiling... I burnt the hell out of the 1st batch.
Remove from oven and allow to cool.
it's not a true "nut brittle" but it worked out fine. I am going to experiment with adding a little pepper heat the next time.... Some finely ground red pepper maybe.
