Brisket nachos.  We always do Tex-mex for Christmas,

My parents just picked me up at DFW. I'm dying for Whataburger or Chik-fil-a.  Gonna look and see if there's one open on 360.

Primarily just 2 of us here. May have a couple or three guests. Probably just rib eye steaks, jumbo shrimp - from the barbecue pit and a sort of japanese style pepper steak stir fry veggies. Artfully accompanied with martini backups and such ...

I picked up a few extra steaks to go with the rib roast.  Not sure what else is happening this weekend... I suppose I should call my brother at some point since he's the only relative in the area.

I like paella but I have a friend who's allergic to shellfish.  I switched the shrimp with flank steak... it turned out great.

It takes about an hour, but it's worth it.  I have nothing against using something from a box.  I like Goya's spanish yellow rice (Arroz Amarillo).

An hour isn't bad. I thought paella was an all day affair for some reason.

Eh.  I cook everything separately.  While the the meat is cooking, I begin the rice.  Once the rice is nearly done everything gets dumped into the same pot and covered, juices and all.  I'll drop in some frozen vegetables and it's usually finished ten minutes later.  My basic paella recipe is chicken, chorizo, beef, and shrimp, rice, diced onions and frozen peas.

We're having a small spiral cut ham, mac & cheese, and potatoes.  The weather caused a change of plans, so no get together at my sisters, just me and the wife at home.  Much quieter, anyway. :)

For some peculiar reason, when I was growing up, a usual Christmas dinner included pineapple chunks dipped in creme de menthe.

All my life, I've never seen it anywhere but among my family.

I'm guessing it's a Pennsylvania thing, as the parents and older brothers and sisters were from there.

It's definitely not anything one might find in Nebraska.

My mom used to cook me one for my birthday. Make sure you get a duckling (young one) opposed to a mature one. I cooked that puppy for 8 hours to get it tender enough to pull the meat off the bone.
