That said, and given the choice, I'll take his bbq'd steak tips over a silly ol' bug any day of the week. The boy has mad steak grillin' skilz.

However, if he ever decides to chef up his lobster casserole dish for me, I may have a change of heart. We'll see.

I'll remember that as I "grill" my ribs today.  230 degrees, 5-6 hours, baste in apple juice every hour.

Oh, FWIW, I did put the rub on last night, so it should have penetrated nice and deep into the meat.  Nice smoke ring when I pull it off.

And yeah, it's store bought wet sauce I'm going to put on at the end, but Stubbs Spicy is just SOOOOOOOO good.

Add the crab cake appetizers, it's gonna be a good day.

I dunno...probably the same reason Mexican food in Texas tastes like it came from someone's ass.  Or that you wouldn't know fish or seafood if it bit you.

Texas cuisine--that's not a cuisine, that's a PENANCE!

But that's okay, go ahead and think that your cuisine actually MEANS something.

Oh, and the basting with apple juice?  That's a little trick I learned when I found the rub/sauce recipe.  Something about being from a 7-time world champion...does the name Paul Kirk ring a bell?
