Need mac and cheese recipe!

Does anyone have a good mac and cheese recipe? Not the Kraft boxed kind, but a good (perhaps Southern) recipe to make for Christmas this year. I LOVE mac and cheese and have been scouring the web for good recipes. Any help would be appreciated! THANKS!

debk is a stupendous cook on just about anything she puts her hands on (so I've heard), but I like to keep it simple and I'm pretty much a cook that does things by sight rather than weighing/measuring.

But here goes:

Boil up a lb. or so of macaroni to al dente. Drain and drizzle a bit of olive oil to keep the mac from sticking.

Get a lb. or so of your favorite cheddar and shred it using a box shredder. Forget about that pre-shredded stuff.

In a saucepan, melt a half-stick of butter. Don't even THINK of using margarine. Sweat about a half-cup of onion, making sure to season the onion with salt and pepper, and even a bit of cayenne.

Add about a tablespoon of flour -- not too much. Stir to make a roux, but don't cook to brown the roux.

Add about two cups of milk, half & half, whatever. Bring up to temp slowly, stirring OFTEN. Bring up to a slow boil, and allow to cool for about 10 minutes. Adjust seasoning, keeping the salt down since cheese has some salt to it.

A little at a time, add the shredded cheese to the milk mixture. If necessary, heat slowly but don't overheat. That'll lump up the cheese and make your day unhappy.

When all the cheese is melted and things are sufficiently gooey, add the mac to the cheese mixture and stir.

You can eat it as is, or put into an ovenproof dish, sprinkle some bread crumb/butter mixture on top and bake at 350 degrees for 20 minutes or so.

Go with the band geeks receipt...............or use Parkay and no need for olive oil.......though the band geek gave a good receipt

DO BAKE IT................you can either place paprika or Hungarian Paprika (Hungarian is spicy) on it when placed in the oven...........but above all else bake it, regardless of what the band geek says, he's right, but after some time in that oven a true orgasmic situation occurs

I just buy the Banquet frozen stuff , bake it about halfway, then add lots of extra sharp cheddar, then finish the baking time.

Eupher's is good. Egg in the mixture makes it better!

I like Alton Brown's. Instead of Panko bread crumbs, I use crushed saltine crackers and sprinkle some high-quality parmesan cheese on the top.

I make a double batch of this on Christmas Eve; we do the 7 fishes and have some non-Italians in the biunch.  :-)

Here's how I do mine:

Make your 2 cups (8 oz) of elbow mac (the larger the better, so the cheese sauce can get into the elbows.  I also love cavatappi pasta.

Make the roux (2 tbsp flour/2 tbsp butter), then slowly add/whisk in 2 cups of milk.  Add 1 finely chopped onion.

Add 1/2 tsp paprika (I like the Hungarian kind) and a bay leaf or two.  If you're REALLY adventurous, add 1/2 to a whole VERY finely diced jalapeno.

Simmer for 15 minutes.  Remove the bay leaf.

Taking 2 1/4 cups of EXTRA SHARP cheddar, take 1 1/2 cups of that and mix it into the liquid.  Then mix with the drained pasta.

Pour 1/2 the mix into a 9 X 9 pan.  Top with 1/2 the remaining cheese, pour the rest of the mix on top, then top with remaining cheese.  I like using a 75-25 mix of (total measure) 1/2 cup of breadcrumbs (75 percent) and parmesan cheese (25 percent) mixed with 2-3 tbsp of melted butter.  Take that crumb mix and spread evenly on top.

Bake at 350 for 25 minutes. 


Best.  Mac.  EVAR.

Also, what we up here do is "lobster mac and cheese", if you've ever had it, you'll swear by it.  Fortunately, we get (relatively) inexpensive lobster in the fall, so I like to stock up and make stuff like that every so often.

I make mine similar to Eupher...only I use a stick of butter. I like it really buttery.

I don't bake mine.
Just hand over the chocolate...back away slowly...far away....and you won't get hurt....

Oh, and if you use Parkay on your mac, your teeth will fall out. Right, CH?

I had a recipe, but I can't find it right now.  It was from an Oprah show, and it was Patty Labelle's Mac & Cheese recipe.  It was soooo delicious, many different cheeses and a lot of butter.

I'm not a fan of crust....browned edges....etc. I want my toast barely toasted, I don't like sandwiches on toast, or toasted buns.

I forgot to add:

Onion should be finely chopped.

With bechamel (white) sauces, some people swear by white pepper. Don't let the pepper Nazi's talk you into using that flavorless white pepper crap.

Black pepper only. If you get questions, just tell 'em the black specks are authorized bug parts.

Sorry, ain't sold on the eggs. I mean, if I want a quiche I'll make a quiche. But I think most of us can agree that mac & cheese is the ultimate comfort food.   :cheersmate:

In a small saucepan, melt eight tablespoons of the butter. Stir into the macaroni. In a large bowl, mix the Muenster, mild and sharp Cheddar, and Monterey Jack cheeses. To the macaroni, add the half-and-half, 1 1/2 cups of the shredded cheese, the cubed Velveeta, and the eggs. Season with salt and pepper. Transfer to the buttered casserole. Sprinkle with the remaining 1/2 cup of shredded cheese and dot with the remaining one tablespoon of butter.

Bake until it's bubbling around the edges, about 35 minutes. Serve hot.
