Blondie (may I call you that?), the secret to good catfish is that it be "wild caught", that is, NOT farm-raised. Catfish tastes like what they eat, and in a fish farm, they sometimes use dog food. Yuck!! Either that, or the cheapest thing they can find.
Believe me, I've eaten fried catfish everywhere from Alabama to the wilds of Kansas, including most of the state of Texas, and nothing beats wild-caught, PERIOD.
