Title: Chicken Shawarma

2 lbs to 2 ¼ lb chicken thighs or boneless breasts
2 T ground cumin
2 T ground coriander
8 cloves minced garlic cloves
1 ½ tsp kosher salt
6 T olive oil
1/4 tsp cayenne
2 tsp turmeric
1 tsp ginger
1 tsp. ground black pepper
2 tsp allspice

If you don't have turmeric, generic yellow curry powder is mostly turmeric.  Rub your chicken down with the mix and let it sit for a day or two before cooking.  I picked up a tube of pureed garlic from the produce section... a teaspoon should equal about one clove.

So tasty.
