Title: Butterscotch Pudding Cake - Quick and Easy
Post by: Lord Undies on February 05, 2008, 09:04:16 PM
1 Duncan Hines Butter Recipe Golden cake mix
1 pkg. Jello Butterscotch Instant Pudding
Preheat oven to 375 degrees

1 pkg. Nestle's Butterscotch chips
3/4 cup canned evaporated milk
1/2 cup sour cream
1/2 cup soft/melted butter (use real butter)
3 large eggs
1/2 tbsp. baking powder
1 little bit powdered sugar

In large mixing bowl, mix milk, eggs, sour cream, and butter.  Add dry ingredient to liquid, except chips.  Thoroughly mix dry into liquid with large spoon.  Let batter rest for 10-15 minutes.  Mix batter again until you think your arm will fall off.  Add 1/2 pkg. chips to batter and blend.  I don't reccommend using electric mixer.

Grease (butter) 13x9 baking dish.  "Flour" bottom of dish with powdered sugar.  Pour in batter and spread.

Bake for 20 minutes.  Remove from oven and sprinkle rest of chips on top.  Return to oven for about 10 minutes.  Toothpick test for doneness.

Cool and eat.

(For added visual appeal, I drizzled/crisscrossed some Hershey's Chocolate Syrup over the top after sprinkling chips)

It is really good.   It is very moist, and not as rich tasting as it reads. :)

I "invented" this one because I like butterscotch and I like cake and I couldn't find a good cake made with butterscotch.

Have you tried it with chocolate?

I haven't baked a chocolate one myself, but I have eaten the chocolate version of this called Death By Chocolate cake or Chocolate Sock-It-To-Me cake.

That sounds decadent!  I'll try it next time I'm baking a cake for a birthday. :)
