What was I thinking?

I grew zucchini this year.  I only planted 2 plants but I am already sick of zucchini.  What the heck will I do with it all? :loser:

If you let some of them get really big, you can fill them with ground beef, cheese, spices, tomato sauce and bread crumbs and make stuffed zucchini!  So good!

Bread is good, heck type zucchini recipes into google, and you'll find any type of recipe you could ever want!

I grate it and freeze it into "bread size" portions (however much your bread recipe calls for).  Then I can make zuchinni bread all year.

I just took a bunch to my friends!  They are going to hate me before summer is over.  Then again maybe, just maybe, I will share a couple of tomatoes with them too.

I admit, I'm not a big zucchini eater.  If they're anything like cucumbers, I like them on whole wheat with chicken salad.  Moss' Hush Puppy Mix makes a good breading for fried zucchini's, though.  Better than okra.

My kids' favorite dinner:

Two boxes of bowtie noodles, cooked and drained.
1, 2 or 3 zuchinni, sliced in half lengthwise, then in 1/4-1/2 in slices, steamed to desired doneness
2 Beef Kielbasa type sausage, , quarted lengthwise, then sliced.  Fried in a skillet to desired doneness

Mix all together, top individual servings with cheese, if desired.  Salt and pepper to tase.


You could cut the recipe down, but my kids get mad if there are not enough leftovers for at least lunch the next day.

Zucchini is good with cous cous.  Dice half a large zucchini, a red bell pepper, and some cilantro and stir fry it.  Add chicken broth, bring to a boil, add cous cous, cover and remove from heat until the cous cous is steamed.  Its good as a side dish

Zucchini is great as parrot food. Our two fids get a few chunks of zucchini (along with about 8-10 other types of veggies) pulse-chopped in a food processor.

They get the veggie mix along with their "perch mix" which is a 3-bean mixture of about another 8-10 things cooked together.

Providing food for parrots ain't easy.  :p

Zucchini Parmesan sounds pretty good right now.  Breaded, baked, cover in a layer of cheese and pasta sauce.

I never even thought of that lasagna noodle sub!  Hubby is always doing low carb and LOVES lasagna!  I am going to try it out.
