Easy and quick. You could cook the potatoes ahead of time and store them in the refrigerator for a few days.

Boil a pot of potatoes until cooked. Next, generously drizzle olive oil on a sheet pan. This will mean the difference between the potatoes sticking and not sticking, so don’t be shy here. When the potatoes are tender, place them on the cookie sheet giving them plenty of room to spread out.
Next, grab your potato masher and gently press down on the potato until it slightly mashes. Brush the tops rather generously with olive oil. Sprinkle with kosher salt, black pepper, and chopped thyme or rosemary.

Bake in a ~450° oven until golden brown and crispy.

I love that website, and have used tons of those recipes. This one is always a favorite.

I've use that technique for years. It's so simple and very easy to modify by adding and subtracting stuff, such as drape a piece of bacon over the smashed tater. Or lay asparagus across to roast.

I've done similar, but I never mash them. I'll take new potatoes (red ones), cut into quarters, drizzle olive oil over them, sprinkle garlic powder, salt, pepper and Parmesan cheese over them. Roast in the oven until well browned and fork tender.

I'm going to be doing this instead of mashed on New Year's Day....heck of a lot easier....

I under-cooked mine and they fell apart when I mashed them. Just a tip. :p
I didn't worry about some damned potato masher... I used the heel of my hand.

Using aluminum foil on the sheet pan, then the olive oil, saves a fair amount of cleanup.

I use my cast-iron pot with lid. I haven't had anything stick to that, and cleanup is just wiping it clean with a sponge.

Thor's technique of quartering potatoes then putting them on a sheet pan (not a well-seasoned cast-iron pot necessarily) makes for a bit of a mess -- at least for me.

Throw down some hunks of onion and bell pepper with the mix.

I'm just pointing out the obvious -- if you've ever had to clean up a sheet pan that had potatoes stuck to it. Oil helps, but there is still some residual....

and throw some sour cream on top when you pull em out.

Looks yummy. I'd probaby sub the rosemary and thyme with a little garlic and parmesan. Just me though. Will be trying this one out soon. Thanks!

If you sprinkle a bit of dishwasher powdered detergent over stuck on stuff, add some hot water, and let it sit for a while....everything comes up and off without having to scrub....and wreck the manicure... :-)
