South 'Beach Diet

Has anyone here done the South Beach diet? My doc told SR and me to go on it. He's doing a very modified version, what I'm cooking plus whatever he wants to eat.  :-)

The problem is that I've stuck religiously to the First Stage and he hasn't. We've both lost about the same amount of weight.

I'm concerned about going into the next phase. Last week I lost 6 pounds; this week only 1. And according to what I read on the internet, I'm only supposed to be in the most strict part of the program 2 weeks (that makes 1 more day on this phase).

I'm concerned because going out of town and worried about starting the second phase without the ability to cook the piles of veggies that I've been making here.

Are there any suggestions on salad dressings to use or any other little tidbits of info that might help?
