What are you cooking/eating for Christmas?

This has been sprinkled out in various threads, but I am curious what everyone is eating.

We are doing finger food for Christmas Eve, bacon wrapped bar-b-qued scallops, teriyaki shrimp and bar-b-qued chicken wings with breads and various veggies with alfredo and cheese sauce.

Christmas day we are having a 5 pound prime rib roast with roasted spuds and various side dishes.

Do you have traditional eats that you make every year?

I'm not sure yet, but that mac and cheese thread is making me hungry.  It's going to be 50° and sunny, I'll probably grill a couple steaks.

My deck is under two feet of snow or I would be doing the same thing. :(

Our menu changed a bit based on that.

I have no idea what my grandmother is cooking, other than a nice pot roast (usually, that means mashed potatoes, green beans, and other side dishes, but knowing her, she'll make surprise changes).

I'm getting on the road as soon as Publix shuts down tomorrow (my store is closing at 7 pm tomorrow, so anyone in a Publix area...get yer butt over there early, because we won't let you in after 7...some customers get so mad when they come to the door, only to find that we've shut off the slider doors and locked them...read the time sign, folks. Sorry, this employee had to rant. )  and heading to Jacksonville to spend Christmas with my grandparents.  I love my Mamaw's cooking, so whatever she does make, I will enjoy it. :)

I'm having a Christmas lunch with some friends,

Standard fare is a charcoal roasted turkey and chicken with vegetables, various salads for sides.

I have a big plate of assorted antipasto for snacks before and after lunch.

Then, the serious drinking can get started as I laid in some booze. Hope it'll be enough.

Indeed it is.

10 Liters of "bourbon flavored" (soaked on toasted American oak)
5 Liters of "rum flavored" (recipe is a trade secret )
and something on the order or 12 liters of plain unflavored spirit.

It's all about 45% ABV

I almost forgot... I'm planning on doing a side of rice.  My usual recipe: rice, chorizo, diced onions, green peas, and maybe some 51/60 shrimp to toss in there.

Are you serving them hot or cold?  Cold (cooked) shrimp is great if you marinate it in beer for a dozen hours or so.  It's the only use I've found for Red Stripe.

I like to boil em till nice and red then serve cold.

I have about half a 10lb box of these http://www.endeavourprawns.com.au/ left from earlier in the year.

Try the beer thing with a little cracked black pepper sprinkled over the shrimp.  It is excellent.

We don't get together as a family for Christmas Eve anymore.  Too many in-laws to visit and such....so we go to Waffle House or some place as a couple.  We get together with our kids on Christmas Day.

This year is going to be a Mexican Fiesta....at my daughter's house....

When the other half and I got together 15 years ago...my kids went to their father's on Christmas Day at 6pm...trying to do dinner after presents and brunch was tough. So we decided to make "our" Christmas on Christmas Eve night and the number of people varies from 6 to as many as 30 for dinner and we have a set menu. He's my sous-chef... :-)

Shrimp with mild & hot cocktail sauce
Small antipasto tray...cheeses, beef summer sausage, olives.
Crackers

Whole beef tenderloin (doing 2 plain ones this yr, instead of 1 plain and 1 stuffed)
Sauteed garlic mushrooms
Twice baked potato casserole
Steamed broccoli with lemon butter sauce
Romaine salad with blush wine vinegrette
Sister Schubert rolls

Creme brulee
B & B mincemeat tarts
Pecan tarts
Cinnamon whip cream

Alcohol.... :-)

Christmas Eve, I go to my mom's for my traditional cajun Christmas of seafood gumbo and potato salad.  I look forward to this meal all year.  I have my tupperware ready for my take homes.

Christmas Day, I spend the day with my brother, SIL, nephews and my SIL's family.  They do more of a general snacking day with various things and tamales!

This will be the first Christmas that I spent with my mother since 2001...my folks traveled full time, and were always some place warm while I was stuck working the holidays...now we live in the same town!

I have alot of gifts for her to open!

I am not sure what the menu is, or where I will be taking her for dinner. I still have a couple days to figure it out!  :-)

Christmas is my holiday each year 
I change up my menu yearly.....This year, I'll be preparing.,

Antipasto for starters,
(Sopressata, Assorted cheeses, olives, roasted red peppers, etc) Served with parmiggiano and herb crusted breadsticks using puff pastry and also garlic bread

Fettucini Alfredo

Surf & Turf
(Shrimp Scampi and grilled tenderloin)
Sides will be Sweet Potato casserole (with marshmallows), a bistecca salad

Apple Pie a'la Mode
Assorted Chocolates

This year's menu will be one of the easiest so far  :-)

tonight, I'm making enchiladas....tomorrow it's all snacky stuff (out tradition).   Mr Flame makes the awesomest cinnamon rolls every Christmas morning, and we'll have southwest eggrolls and queso and chips and a spinach quiche thingy and pepperonis and cheese and crackers and cookies and fudge.  It's a "graze all day long" kind of thing.

I'm making lasagna. The sauce is cooking on the stove top as I type this. I'll have the lasagna all put together tonight before I head to church. It sits in the fridge overnight and is ready to bake the next day.

Mom will be bringing over snickerdoodles (my favorite holiday cookie).

I also have a bag of wheat rolls that I will add to the meal. I'm thinking about "dressing" them up a bit. Maybe brush on some butter and sprinkle with garlic powder and then warm in the oven for a few minutes.

Do any of you guys "dress" up store-bought dinner rolls? If so, what do you do specifically?

Tonight, we are having a BBQ spread (brisket, potato salad, cole slaw, etc.) at my folks for all my dad's kinfolk. Tommorrow, we'll have a Robertson's smoked ham and cornbread dressing, along with all the sides, for Christmas dinner in Texas.

NY strip steak, medium rare
Rice with shrimp, chorizo, onions, and green peas
Alfredo pasta topped with Parmesan and bread crumbs
Mac and Cheese with sour cream and onions, topped with cheddar
Green peas and mushrooms
