The meaty baby back ribs have been marinating in beer since yesterday, getting ready for tomorrow!

The meaty baby back ribs have been marinating in beer since yesterday, getting ready for tomorrow!
My dinner for tomorrow is still alive and kicking. Lobster and little neck steamer clams, fresh corn on the cob and a pile of slaw. I do this real easy, I buy the sea food fresh cooked, run a few stop lights to get it home hot, Stuff the Lobsters, ready to be put under the broiler or outside BBQ. Put the corn on to steam. Found a take out place that makes slaw to cry for and their French fries are wonderful.
Screw it I just may put on Dogs and cover with canned something or other, serve Pringles and have a peanut boil.

Family, fun, rides, arts and crafts, and lots of good food.

I bought some ribs too. I was going to braise them in Coca Cola and finish them in the oven (I don't have a grill yet).
I'm headed out to the Renaissance Festival today, so I'll probably load up on fried turkey legs, Ye Olde Funnel Cakes, and whatever else looks interesting.

Pulled pork sandwiches, cole slaw, corn, and not sure what else yet, maybe BBQ beans.
Think I might also make my easy cheese cake.
1 - 9" graham cracker crust
1 - lrg pkg of cream cheese softened
1 - can sweet condensed milk
1/3 cup lemon juice
1/2 tsp vanilla (optional)
with electric mixer or food processor, beat cheese and milk until smooth,
add lemon juice and fill pie shell, refrigerate until set.
Top with canned pie fruit, lemon curd, fresh fruit of choice or just eat as is.
My son's favorite is with Comstock's pie cherries, mine is with lemon curd.

Did steak on Friday. Lobster and leftover steak last night. Ribs today (already in the smoker for about 2 hours now, 2-3 more to go) and steak/chicken tips tomorrow.
Yeah, the grill's getting a bit of a workout this weekend. Be interesting to see if I can make the propane last through tomorrow.

Today's the day to do the ribs. Waiting until better 2/3 comes home from Wisconsin this afternoon, probably ~ 5 PM.
Will be cooking in the garage door opening, between the raindrops

I haven't done mine yet... maybe tomorrow. The sun is finally out and there's too much stuff to do outside.

If the rain was anything at all like we had here, fuggedaboudit. No grilling at all yesterday. Monsoon season most of the day.
It's so damned wet that the farmers can't plant. It's a serious problem.

Man, you guys eat so well! I was soooo exhausted yesterday, from all the spring cleaning + gardening over the weekend, I barely--just barely--managed to cook up some burgers. Had them with chips, and called it dinner.

It's so damned wet that the farmers can't plant. It's a serious problem.
It was wet out there, but I set it up under my open garage roof with a 3' eave.

That's usually what I do during the week. Meat and a side... usually a potato. Good thing sweet potatoes are available right now.
I might have to see if plantains are available. They're good fried.

I'm with you, Karin. Maybe after I retire (IF I retire????), I'll have the time to experiment more. As it is, I drag myself home after work and throw something together -- more often than not, a salad with leftover chicken or ham in it and call it dinner.
20, even 10 years ago, I had much more ambition :bawl:
I regard the fridge on some days in much the way I regard my closet -- I open it up and say "bleh"!

I say "bleh" to my closet, too. I used to have much more ambition 10-20 years ago, too. I honestly don't know how I did it. I worked in a 2-hour-each-way commute, and still put on some pretty fabulous meals. It doesn't help that husband #2 is not culinarily adventuresome. Why bother if he's just going to look at something suspiciously, and ask "what's that?"

My ribs turned out awesome. :yahoo:
I had mistakenly picked up some spareribs, but they still came out great. I simmered them in BBQ sauce, Coca Cola, and apple cider vinegar (enough to cover the meat) for 45 minutes. I slathered them with more BBQ sauce and finished them off in the oven (400 degrees for 15 minutes). Probably would have been tastier on the grill, but it was good enough.

I really rarely cook any more. It sucks cooking for ones self. Today, I had peanut butter & pretzels with a LOT of coffee and then raisin bran cereal & some yogurt. My usual "fare" are frozen hamburgers from Sam's Club, chips & a soda, maybe a baked potato or two, or TV dinners. I'm losing my cooking touch. Of course, being sort of stuck in this wheelchair for now limits going outside to use the grill or smoker.
My place isn't handicapped accessible nor do I see a realistic way to make it so. Hopefully, I'll be mostly out of this thing next month sometime. I don't know exactly what happened, but my legs quit working for the most part when I got really sick last Feb/ March. I still go out once in a great while, but it's a PITA to load up this chair & walker for a few hours of enjoyment. This coming Saturday is steak night at the American Legion out at Lake Texoma. I plan on attending that with some singles group. $12 for a good sized rib eye steak, baked potato & a salad isn't too bad and the drinks are cheap, not that I drink much. You Dallasites COULD come on up & join us (you don't have to be single to join in on this as far as I'm concerned.)

I cooked ribs for the first time on the fourth. I had recently gotten a smoker box for my grill and was itching to try it. I prepared them with a North Carolina Rub recipe I found here:NC Rub Recipe (http://bbq.about.com/od/rubrecipes/r/bln0224a.htm)
I cooked them using techniques I picked up from Watching BBQ Pitmasters. I smoked them for 3 hours over charcoal with mesquite chips. I flipped them every 15 minutes and sprayed them with a mix of applejuice/water to keep them moist.
After 3 hours I took them off the grill and wrapped them in foil with Brown Sugar, Honey, and Butter. I let them cook for 2 hours. once again, flipping them every 15 minutes.
I put them back on the grill for one more hour. This was supposed to let the bark firm up, and finish cooking them. The picture is the end result of all that work. I can't wait to cook them again!! :drool: :drool: :drool: :drool: :drool:
