But the big mystery is what salad dressing is the right one? I've used 1000 Island and Blue Cheese. The Blue Cheese seems to work out better.

Any other suggestions? So what salad dressing do you use..........

Blue cheese?  I thought it was always Thousand Island.

I love a good reuben.  It's the first thing I order if I'm in a new restaurant for lunch.

Toasted rye bread, swiss cheese, sauerkraut, thousand island dressing, corned beef.  I've never had them any other way.  Why mess with perfection?  :-)

Arby's has one and the cheap bastards around here don't even toast the bread.  :mad:

I was thinking Ranch, but maybe the 1000 Island is needed to balance the sauerkraut.  :-)

You have the option of adding extra pastrami.  I went with the regular sandwich.

They didn't toast the bread either time. :mad:

The 1000 Island was okay, and I did try Ranch once and it was okay, but neither came up to Blue Cheese.

I grill Russian or German black rye along with the corned beef brisket slices and sauerkraut. When the sauerkraut is hot, I put the sandwich together with the swiss cheese and dressing, and heat just a tad until the cheese starts to melt.

I use a two sided Lodge grill over two stove top burners:

I shan't apologize.  I like corned beef and mustard.  I like pastrami and mustard.  I like Swiss (and all kinds of) cheese and mustard.  I like just about all deli meats with mustard.

I don't like tuna and mustard.

Can't go wrong with one of these (http://www.amazon.com/Lodge-Logic-LPGI3-Grill-Griddle/dp/B00008GKDQ). Read some of the reviews.

Lodge is always dependable.  I think I got an off-brand that was made of aluminum.  That thing bent like a Castro Street queer once I put some heat on it.

I won't eat deli meat without the mustard.  Cheese in a sandwich must also have mustard.  Mustard is gooooood stuff.  I love it. 

However, mustard on corned beef is a bridge too far for me.  :tongue:

We have the same taste, in deli foods anyway.  I prefer mustard too.

I like mustard, but it's 1000 island on a Reuben.  Not blue cheese, and that's my favorite salad dressing.

I'll go along with mustard. I love it, too. And it goes well with cold, deli style sandwiches, especially with paper thin sliced beef or ham, and cheese...even bologna!

But a Reuben is a hot, half meal prepared as a grilled sandwich. No pickles or lettuce or tomato.

In high school, I had a girlfriend that put mustard on her french fries because nobody would swipe a few when we would get together at Max's drive-in after school.

She didn't like it either, but nobody snatched her fries!(http://www.conservativecave.com/Smileys/default/lmao.gif)

1000 Island on a Reuben, it's the only thing I will eat with 1000 Island.

I do add spicy brown mustard after it's cooked on the corned beef side.

I also eat french fries with mustard.... honey mustard. Or mayonnaise. Or Ranch dressing. Never ketchup.

1000 island is correct.

Mustard is fine on other things.

If you like a good brown mustard this is good, but hard to find. You can now find it in other states. I have tried others, nothing comes close. Some newer versions of brands are getting closer, but they still miss the mark.

My great uncle used to let the founder and his son hunt on his farm land many years ago. It started when my uncle was a little kid and then as he got older the other family members continued to visit the farm.

Our entire family likes Weber's Horseradish Mustard, made in Buffalo, NY. It goes great with Reubens and everything else

I order a case of it maybe twice a year. It's getting time to do that again; we're down to 2 jars of it now. We share the case lot with our kids.

No mustard in potato salad.

People who do that are certified nutcases.

Euph's Potato Salad:

5 lbs. of russets
2 leeks, cleaned and chopped
3-4 stalks of celery, cleaned and chopped
1 large green (bell) pepper, cleaned, seeded, and chopped
1/4 cup red wine vinegar, or to taste
2-3 cups of mayo, or to taste
1 cup fresh dill
Kosher salt and fresh ground pepper to taste

Cook the potatoes in their jackets, gently. When fork tender, peel and slice into bite-sized pieces into a large bowl while hot, using a towel to keep from burning your widdle fingers.  ::)

WHILE THE POTATOES ARE STILL HOT, add the vegetables, vinegar, mayo, dill, seasonings.

Mix gently.

The mayo soaks up into the potatoes as they cool, leaving you with salad, not soupy, mayo-infested mess.

No mustard in that recipe.

At all.

THAT, my friends, is potato salad. Nothing else even comes close.

That's how I make mine too.  I'll even add sliced olives if I have them.

Interesting about the flavor and ingredient differences in a highly contentious and individual food like potato salad.

French mirepoix contains onions, celery and carrots.

Cajun mirepoix contains onions, celery and GREEN PEPPER.

I love either good deli corned beef or pastrami on rye piled mile high with mustard. Found a place not half a mile away with genuine NYC deli versions -- absolutely wonderful! And they bake their own rye bread.

Isn't that the lamest?  Ruined the lunch for me.  A Reuen has to be grilled.  The black pumpernickel is my favorite bread, and yes, always 1000 Island.

Sauerkraut is not fattening or unhealthy!  It's cabbage and vinegar.  And good lean corned beef isn't an artery buster, either.  So, No.  You're describing a turkey sandwich.  With raw cabbage sprinkled in it.

Back in the late 1960s we used to go to a place called Rube's Sportsman's Club in Harvey, IL. (Rube's is gone now, along with all the memorabilia on the walls and shelves, and the signatures of players from Chicago pro baseball and football teams.)  They served open-faced reubens that were to die for. Piled HIGH will corned beef and sauerkraut, you had to eat them with a knife and fork, and we get 'em served with horseradish on the side.

I've done the butter-flour-mustard sauce and it's great on salmon or swordfish (I add some dill to it also)

My mom used to make these:

Combine butter, mustard, and poppy seeds in a bowl.
Spread on both sides of a roll of your choice (onion/kaiser/etc. something substantial)
Layer with Ham and Swiss

Wrap each sandwich in a sheet of foil, and bake at 350 for 20 minutes or so.

I'd forgotten all about those, I'll have to make them again.  Really good!

Well, there's only so much you can say about a Reuben sandwich. Mustard, on the other hand, there's a boatload to talk about. Dijon, whole-grain, horseradish, the list goes on and on and on..... :-)
