Black-Eyed Peas and Sausage Jambalaya
1 lb smoked link beef or pork sausage, sliced and browned
1 (15 ½ oz) can black-eyed peas with jalapenos
1 (10 ½ oz) can beef broth
1 ¼ cups uncooked medium-grain white rice
1 stick butter, chopped
1 small onion, chopped
1 small bell pepper, chopped
3 cloves garlic, minced
½ cup green onions, chopped
Tabasco, to taste
Drain browned sausage
Add with all remaining ingredients to rice cooker and stir
Cover and turn on
Let stand covered 10 minutes before serving.
Cooks for 18 minutes and makes up to the 5 cup level
I used a jalapeno sausage. I didn't have beef broth (just used water) or green onion and it still turned out really good. I can see that the broth would "deepen' the flavor a bit. I always use medium grain rice (it's a cajun thing), but I'm sure a long grain would work well. It did seem that my rice cooker took longer than 18 minutes, but the rice was done just right when it turned off.

Actually you might be able to. The onions and bell pepper come out really soft as do the peas, the only thing to watch out for is the sausage. I used that Chapel Hill jalapeno smoked sausage. HEB has really good jalapeno sausage if there's one near you.

The only HEB I know about is in Roundrock. I can probably handle the sausage. I ate chicken 'n dumplings tonight.

I'm glad you're able to have more solid foods. And yum chicken 'n dumplings sounds good.
