For one 9.5 by 5 inch loaf pan you will need:
1 pkg (10 oz) frozen sliced strawberries
2 eggs
1/2 cup vegetable oil
1 cup sugar
2 cups all-purpose flour
1 1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/2 tsp salt
3/4 cup chopped walnuts or pecans
Defrost berries according to package directions.
Beat eggs until fluffy. Add oil, sugar and berries, beating until light.
Mix flour, cinnamon, baking powder, baking soda, nutmeg and salt. Blend flour mixture into strawberry mixture just until flour is moistened. Do not overmix. Stir in nuts. Pour into greased pan.
Bake at 350 degrees for 50 to 60 minutes, or until tester inserted in center comes out clean. Cool 5 minutes. Remove from pan. Finish cooling on rack.
Notes: I prefer pecans to walnuts, but it's all good. As for the spice measurements, I ALWAYS use three to four times as much as the recipe calls for. Consequently, my latest batch of this bread tasted like a Strawberry Nutmeg Pecan bread.
