I made some of this last night and mixed it with cut-up chicken pieces, onions, and peppers served with rice. It's pretty close to the real thing. If you're feeling particularly lazy, Wal Mart sells diced peppers and onions in the frozen vegetable section. The store here had 12 oz. bags for 89 cents. I like Goya's Spanish-style yellow rice (Arroz Amarillo)... it comes already mixed with dried spices and vegetables (onion, celery, peppers, and corriander).
1/4 cup mayonnaise
1/2 teaspoon cumin
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon garlic powder
1 dash salt
2 teaspoons minced jalapenos, slices
2 teaspoons jalapeno juice, from minced jalepenos
3/4 teaspoon sugar
This makes one serving. The recipe calls for diced jalapenos and sugar, but I did not like the sweetness the sugar added and you could leave the jalapenos out as well if you prefer something milder. I was out of jalapenos and ended up using some chipotle peppers I had in the freezer.
