The key, boys and girls, is FRESH. No fresh, no use.
One large ripe tomato, or a few roma tomatoes, diced and seeded.
One medium onion, diced
3 cloves garlic, chopped fine
2-3 tbsp fresh basil, chopped fine
Extra virgin olive oil
Basalmic vinegar
Baugette of bread (I've found a garlic baugette at local grocery store that I like a lot)
Slice bread diagonally, brush lightly with butter. Place in preheated 350 degree oven for 10 minutes, then under broiler for last 30-45 seconds until top of bread crusts and turns golden brown.
Mix remaining ingredients, using just enough olive oil and basalmic vinegar in roughly equal amounts to just coat the onion/tomato/garlic/basil with no liquid in bottom of bowl. Salt and pepper to taste.
Serve immediately.
Very simple and quick to make, and is great for dinners or parties.
