The number one thing that makes bad Kabobs is lean meat.

More fat is better when making kabobs.

And I'd surmise that Rugnuts' question about marinade could be answered a la the Greeks - olive oil, balsamic vinegar, garlic, fennel, oregano. But I'm just guessin'.

One thing I do not like about a certain Persian dish, is that they put LIMA BEANS in the rice.  

(I know some about middle-eastern cooking, as I was married to a middle-easterner for some years).

Beef kabob is my favorite Persian food! But also like chicken kabob :)


What's the yellow on the rice? is it a sauce? or a scrambled egg? And any American food available there?

You can "Come and Take Them", but you'll slip and fall on the olive oil.  :-)

(I think Alex the Great did a lot for the Persians -- even added to their cuisine.)

I think saffron threads + some hot water will make rice go yellow (maybe red or orange).

First word: tofang ("weapon"/"fire arm") then: the years inscription: 1309 (today is 1389 so that means 80 year old), then: nemooneh (means "prototype" or "production" or "replica-type"), then: karha (means "works"), then Brno (the company name/manufacturer) finally: 04090. Read this right-to-left.

This has seriously changed my whole perception of Iran.  Thank you for all of your knowledge and insight - I hope more Americans realize Iranians as a people are largely different from their people.
