Roasted Lime Chicken with Spanish Saffron Rice

This is what we had tonight....very easy to prepare.

Saffron Rice

2 c. water
1 c. long grain rice
1/2 an envelope of Goya Sazon (with azafran aka saffron)
1 tablespoon of butter
salt and pepper

Put all ingredients in a saucepan, mix, bring to boil, cover and simmer for 5 minutes.  Then take off the burner and remove from heat.  Keep covered for 30 minutes.  Fluff with a fork when done.






Roasted Lime Chicken

Chicken quarters ( I like dark meat)
1 lime
Fresh Thyme (but you can use dry)
Garlic Powder
Olive Oil
Salt and Pepper

Preheat oven to 400 on a counter top convention oven

Rinse chicken and dry.
Place on roasting pan
Add all other ingredients.
Use your hands to rub in the chicken and leave
thyme leaves and lime wedges in pan to roast.

Cook for 50 minutes at 400
Change to broil for 10 minutes until skin is browned.
I also baste the chicken with the juices a couple times during cooking.

Enjoy!
 BTW..I always cook chicken with the skin to keep it juicy...but remove the skin when I'm ready to eat. Then I serve a little of the juices on the rice and chicken.  Yummy

Wow- that looks delicious!  Thanks for posting Hawkgirl. I'm always looking for new things to try, and this looks like a good one.

Fog= steam coming off your food and clouding the lens...
Just hand over the chocolate...back away slowly...far away....and you won't get hurt....

I have also made this dish with oranges instead of lime...on a whole chicken instead of quarters...After I squeeze the orange over the chicken...I fill the cavity with the quartered oranges and onions...

The last whole chicken I did, I put the onions and orange inside with a bit of butter, then smeared butter between the skin and meat on the breast....I was trying to get a Butterball effect....it had a great flavor and very moist.
