I don't know what Tonto is making, but I had a baked fish on a trip to Mexico.  It was a foil-wrapped affair; fish filet, then topped with a mixture of onion, peppers & tomato, mildly seasoned.  Wrapped up and baked.  It was quite good.

I'm trying to picture an oven in a tepee.   Maybe they cooked it wrapped in foil over some hot coals.
