Turkey burgers, and blue cheese burgers
« on: August 30, 2013, 11:38:25 PM »
I think they are disgusting!!  My BIL, at family gatherings, will do a batch of turkey burger, a batch a bleu cheese burger, with the bleu cheese crumbled  in the patties. If it were me, it would have a bowl on the side for guests who want to sprinkle it on the hamburger. I just feel the blue cheese is very strong cheese, taste and smell wise., It seems so overwhelming, within the hamburg, itself...

Turkey burgers, seem to come out too dry!!
Turkey, should be served, mashed taters, stuffing, gravey, and cranberry sauce..
that is my vent, sorry

He could be overcooking the turkey burgers. They have less fat so that makes it a little bit of a challenge. It can be done but you really need to babysit them when grilling to prevent them from over cooking. You also have to make sure that the internal temperature is 165 to prevent salmonella. It can be done. You can really make some delicious and juicy turkey burgers. There are some great recipes out there, but I don't do anything all that special. I seer the burger on the hot side of the grill to seal in the juices then I flip it and let it finish cooking on the cooler side of the grill with a medium flame. The seer also holds the heat in while it finishes cooking.

As for the blue cheese a little goes a long way. I would think he would make some with cheese and some without. Not everyone likes blue cheese. In fact when it comes to burgers most time I do not even want any type of cheese on mine. I do not mind a blue cheese burger once in a while as I often purchase the premade beef patties. I really like the cheddar bacon beef patties!

Turkey burgers- never cared for them. I like my turkey roasted, with the occasional #4 shot still in the meat.

Blue cheese burgers are one of my favorites, but I put the cheese on top (not inside the meat).

An occasional #4? never heard of that.., is that a special sauce or something??

Wild turkeys. The "shot" is the pellets from the shot gun shells.

This is from an old friend who was a chef in Vegas.

It's restaurant sized, but we cut it down to our tastes. I add a lot more Worcestershire Sauce. Our kids love it!!!!

It's also great as a salad dressing!

Oh my.....sounds good.

This guy just passed away, long time restaurant owner and had a famous garlic salad dressing. The guy was a character and was just killed in a one vehicle accident, RIP. His food was always amazing. He had a sign outside of his meat company where you could purchase BBQ ribs, pulled pork, Italian Beef, his salad dressing and other items...the sign said "Free Smells." It was always fun to stop in and see him. Growing up I ate at his restaurants with my family and extended family.

I just found out he passed away a couple minutes ago when I went to look up the recipe, it was kind of a shock. There was another great restaurant owner that passed away in the past week also, famous for his BBQ ribs. He even had a restaurant in Omaha. Super great guy, had been on the Food Network, great food. I need to quit looking up news from "back home."

This is the closest I could find the to recipe, it was from one of his competitors:

Plantation Garlic Dressing

1 quart of Miracle Whip

1 pint of Kraft French dressing

1 bud of finely chopped garlic

3 teaspoons of anchovy paste

1  small package of Roquefort cheese

Add melba toast to the salad before serving

The only place I've ever eaten a turkey burger is at  Fatburgers, and I gotta say they are delicious.  Super moist and very flavorful, I actually prefer a turkey burger there to their regular burger.

An old restaurant here used to make their own Roquefort dressing.  It's similar to yours, but used garlic and green onions too.  I've made it before using blue cheese in place of the Roquefort.  Don't remember the vinegar in it.

Mistakenly bought some bacon blue cheese burgers from Sam's Club. Have to say, I was less than impressed. Most of them are still in my freezer, waiting for their chance to make a turd. They'll be waiting a while!!  :-)

Blue cheese is a general classification of cow's milk and/or goat's milk cheeses with a blue or blue-green mold.  The blue mold in these cheeses is due to mold spores from Penicillium roqueforti or Penicillium glaucum, etc.

That's a shame because the name sounds REALLY good!  :bawl:

If they are made right, blue cheese burgers are the best- but pre-made frozen blue cheese burgers are a no-go.

1/2 pound beef patties, grilled medium-rare
Bacon
Mushrooms, sauteed in bacon grease
Marzetti's Bleu cheese dressing with extra cheese crumbles
Toasted bun (optional- I don't eat 'em, personally)

Served with an ice-cold Rolling Rock
