Smitten Kitchen's Brocolli Slaw

Here's a recipe I never would've tried on my own. My sister made it for Easter and it was a hit.  There were no leftovers :(.

Broccoli Slaw

Makes about six cups of slaw

2 heads of broccoli
1/2 cup thinly sliced almonds, toasted
1/3 cup dried cranberries
1/2 small red onion, finely chopped

Buttermilk Dressing (Adapted from this salad.)
1/2 cup buttermilk, well-shaken
1/3 cup mayonnaise (this is more than is in the original, to thicken the dressing further)
2 tablespoons cider vinegar
1 tablespoon sugar
3 tablespoons finely chopped shallot (or, you could just use a little extra red onion to simplify it)

Trim broccoli and cut it into large chunks. From here, you can either feed it through your food processor’s slicing blade, use a mandoline to cut it into thin slices, or simply had chop it into smaller pieces. I used the stem and the flowerets, but if you have a broccoli stem aversion you can just use the tops.

Toss the sliced broccoli with the almonds, cranberries and red onion in a large bowl. Meanwhile, whisk the dressing ingredients in a smaller one, with a good pinch of salt and black pepper. Pour the dressing over the broccoli (if you’ve skipped the stems, you might not want it all; I otherwise found this to be the perfect amount) and toss it well. Season well with salt and pepper to taste.

I have made a version of that for years, but I add some cauliflower to it.  And, sunflower seeds, hard boiled eggs, and a little shredded cheese.  I omit the cranberries, and almonds. 

Whatever, it's still good, and it will keep for a while.  Matter of fact, I made it a few weeks ago and it was my lunch for that whole week.

Eggs are good food.

There's only one way I can eat eggs -- scrambled or in an omelet. Y'all can keep them hard/soft/poached/deviled eggs 'n such.

When I think of how my Dad used to make his eggs, I get sick.

He'd render about a half pound of bacon then, while the bacon grease was super hot, would crack his two eggs in the hot grease.

He'd actually take his spatula and slop the hot grease over on top of the eggs, "cooking them" to make them "over easy."

Meanwhile, the bottom of the eggs would burn and the bacon detritus made the eggs look like they had black olives sprinkled on them.

His white bread toast and oleo would round out his breakfast.

And never at 375 deg.   :hammer:

I like bacon as much as the next guy, but the delicate flavor of eggs is overwhelmed by bacon fat. Ergo, the butter. At lower temperatures.

Chi's salad sound like it would look really pretty.  Festive, for a holiday.  Raw broccoli upsets my stomach, though.
