Need a recipe for" birds" or cabbage rolls
« on: March 23, 2013, 03:46:40 PM »
I have been looking for many years for a recipe for cabbage rolls. I had an old Polish lady I use to visit and she made the best I ever tasted. Any old recipes out there? Good weather for them.

I don't have an old recipe, don't think I ever did have a recipe, but this is how I make mine.
Makes about 8/10

Remove core in bottom of cabbage head and put into pan of boiling water
remove from heat

1/3 cup dry rice (cook about 7 min in boiling water - drain)

mix together

1 lb ground beef
partially cooked rice
grushed garlic
salt and pepper
2 eggs
1 small onion finely chopped

Gently remove cabbage leaves, trying not to tear
fill leaf with about 1/3 cup stuffing mixture
roll into little pillows
put seam side down in oblong baking dish (can use a dutch oven with lid)
pour one 16 oz can tomato sauce and '1/2 can water over top
cover with foil and seal

Bake for 1 hr at 350 deg.

Some people like beef broth instead of the tomato sauce.

This is the one my wife makes. Good stuff.

Mine are a little different.

2 lbs ground beef
1 tsp kosher salt
1 tsp fresh black pepper
2 cups Spanish Rice(You can cheat and just add some good salsa, to cooked rice)
2 cloves minced garlic
1 large head cabbage
1 large can tomato juice
1 package kraut (from meat section)
sour cream for garnish (adds an awesome zing)

Preheat oven to 350°F.

Gently remove leaves from head of cabbage.

Place leaves in boiling water until flexible. Drain, set aside to cool.

In a large bowl, add beef, salt, pepper and the Spanish rice. Mix until blended.

Place a portion of beef mixture on the cabbage leaf and roll up. Place each cabbage roll into a buttered  9x12 dish with the seam of roll side down.

Pour the tomato juice over the rolls, leaving 1/2 inch from top and pile on the kraut.

Cover with foil and bake for 1 hour. Serve with a dollop of sour cream to really add some great taste!

Enjoy

What I do, when I am feeling lazy is the following:

Cook up some rice
Brown up some ground meat
Chop up some cabbage.

Saute the cabbage with a little garlic and onion.

Toss the rice and meat in with the cabbage and fill up with tomato sauce.

Thanks for your idea - sounds like my kind of cooking - so thanks.  I needed a quick recipe to use up that huge cabbage we have.   :-)

That's interesting, Tiny using Spanish rice.  Often, these cabbage rolls are rather bland.  When I made them, I made them just like Dori did.  Current husb no like.

Way back when, in the beginning of time, I had a Good Housekeeping cookbook that had a recipe for a stuffed cabbage.  Basically, you lopped the top off a cabbage, hollowed it out, mixed up your stuffing and put it back in.  Put the top back on and tie up with twine.  Then you cooked it on the stovetop.  You could cut it in wedges.  It was so good, I made it once.

Years and years later I gave that book to a buddy of mine.  Last January, I copied that recipe down, because I never forgot it, when I was at his house for a dinner party.  Well, I just remembered I have no clue where I put that, and will be going back to his house for Easter Dinner.  How lame will it be to copy it ONE MORE TIME!

I like the idea of adding salsa to the meat mixture.  That would really spice it up.  :)

I use Campbell's Golden Mushroom Soup.  It's really rich and good.

I once had a whole lotta zuchini to use up.  So I made stuffed ones, with this similar stuffing.  It was so boring and blah and bland, I could not get it spiced up enough.  They were a hit at a potluck, though.

That makes a good gravy base.  I like to make meatballs with jack cheese, browned in a skillet (take out) add the golden mushroom soup to the drippings (with a little water) and then add the meatballs back into the gravy, simmer til done then serve over rice.

When I make stuffed peppers or cabbage rolls, I use 1 packet of Uncle Ben's garlic and butter 90second rice and one packet of the Spanish Rice and mix them together. Gives more flavor....

Close enough for government work.  There weren't any beans, and it was a tomato sauce base, close to regular cabbage rolls.  Hi5!

My introduction to cabbage rolls was from first generation Polish folks.

No beef for them they diced and mashed up fresh Kielbasa , pronounced by the natives as --Kilbas-ey.

Some would buy the links and have the butcher grind it up, others smashed it themselves or diced        it.

Every one made cabbage rolls different deciding on what part of Poland they came from.  Then the fact that as first generation Americans they messed around with Grand Pops recipe  a bit.  Allot depended on what was available to them in the area they lived in the OLD COUNTRY.

I have eaten them made with mashed potatoes instead of rice, some with turnip or carrots.  Seems one can stuff the leaves with most any root crop.  Onions, potato's , turnip, carrots, rutabaga, garlic and even radishes.

We Americans are use to some form of tomatoes or sauce but I have eaten some excellent rolls with chicken gravy.

Ground Hot Italian sausage is a good substitute for beef If you have no Kielbasa and if you want something that is in no way bland.

Cabbage rolls are one food that can be played with and the possibility's are endless.
