Lady and Sons

Took my lovely wife to Paula Deans place over the weekend and still have the food tastes in my mouth yum :drool: anyone ever been there?

I live very close to Savannah...and worked 10 minutes away from her restaurant. I have never been there, and don't plan to. I grew up down here and know tons of people that can cook as good (if not better) than her :-)

I visited Uncle Bubba's (her brother's place) the food was great. Fried fish that was NOT greasy. I thought fried food was supposed to be greasy.  :-)

Wanted to go the last time I was in Savannah, but the line was soooo long.

We went to Uncle Bubba's instead and it was great.

I have several of her cookbooks.  :drool:

I love Paula for being the sweet lady that she is, but I don't think she is the cleanest cook in town.  She grazes the kitchen too much.

Fried food is only greasy if the oil is too hot or it sits in it too long.

A friend told me some restaurants reuse oil more than one or more days.  :puke:

Three days is about average for a batch of oil, but it gets cleaned/filtered once or twice a day.

I remember having to melt shortening in huge, 15-gallon pots for deep fat fryers.

We hadn't graduated to vegetable oil in those days (mid-Seventies). And yeah, when it was time for fried chicken, we went through a shitload of shortening.
