Yum to both. I was going to make the kids lasagna but their dad is getting them early so I'm thinking if maybe frying up some leftover ham and making some eggs for my dinner after a nice workout tonight. Enjoy. Definitely the time of year for those types of food:)

I decded on the beef stew....smells good. I usually will have one meal and put the rest  into separate containers to take for lunches to work....

Tonight was Corned Beef and Colcannon.  Tomorrow I will cook some Navy Bean Soup with Ham and a Beef Stew in the crock pots.  Some will be frozen for later use, and the rest for this week.  I just don't have enough time to cook in the evening, so I am planning to cook several meals on Sundays, to eat on during the upcoming week.
R.I.P. LC and Crockspot.  Miss you guys.
