Turkey Recipe throwdown!

Laaaaadies and Gentleladies! Boys and girls of all ages! Watch as CC and CC throwdown with their turkey day recipes!


So I make this nasty ass pesto for my turkey, everything is eyed since tasting it is atrocious. Its like 5 am and I just put mine in since it'll take like 11 hours.

Half an onion

A bunch of thyme

A bunch of rosemary

A bunch of basil

some salt and pepper

2 sticks of butter

process it all together and rub it all over your turkey, and inside. Cook it breast down 350, 30 minutes per pound. (Adjust accordingly to done-ness about 180 degree internal.)

Then it magically tastes delicious after its done.

Then it magically tastes delicious after its done.

Brining first. It's the only way. The brining results in osmosis that transfers water to the meat, resulting moisture deeply embedded within the flesh. Otherwise, even with a meat thermometer in the thigh, it's a bit of a crapshoot.

And if you stuff a bird, you've complicated the end temp game even more.

Other than that, your herbs sound great! And NOBODY can go wrong with butter.

Well since your father with his post darn near ended me up in the ER , now poor hubby has to cook the dinner.

We go round and round each year on the to brine or not to brine, to stuff or not to stuff, and now this new warning to not wash the bird or any kind foul just to wipe them out inside and outside with paper towels.  Something about bacteria getting in the air and on counters when one washes them inside and out.   

Trying a Paula Dean recipe for butter nut squash, frozen and cubed. The directions say to add a can of candied yams to the squash.  HMMMM interesting but I will give it a go.

Stuffing made outside the bird this year, and as all ways I add a handfull of crushed walnuts as the French do.

We may make creamed pearl onions with a bit of dry sherry and Ritz cracker crumbs on top,  all up in the air for now.

Chicken Pot Pie

1 pound skinless, boneless chicken
breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
   
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk
 
2 (9 inch) unbaked pie crusts
Directions:
1.    Preheat oven to 425 degrees F (220 degrees C.)
2.    In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
3.    In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
4.    Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
5.    Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.


I season to taste when I'm making the base sauce--poultry seasoning and salt and pepper. I also use a package of frozen mixed vegetables instead of buying all that separate. The onion and celery is fresh however.

My turkey is done and its so tender that its breaking apart.

Okay, but is it juicy?

Because when I see turkey (especially white meat) that's breaking apart, it's dry.  ;)

ETA:

On a slightly different note, the bird goes into the brine in an hour or so, overnight. (We're having our T-day tomorrow.) Made up a cranberry relish, topped off with a nice, healthy shot of Grand Marnier; Mrs. E made up the first round of her twice-baked sweet potatoes; and she dried the bread cubes for the dressing in the oven.

The really big news item for today is, I gave my tuba a bath and polished it. That's a big job. Glad it's done.

How do you make your brine?  I'm considering doing a brine for my Christmas turkey.

How do you make your brine?  I'm considering doing a brine for my Christmas turkey.

Alton Brown has a good recipe:

1 gallon of water
1 tbsp black peppercorns
1.5 tsp allspice berries
1.5 tsp candied ginger
1 cup kosher salt
0.5 cup brown sugar

Heat these ingredients in a large pot until the solids have dissolved. Let sit till it's at room temp, then refrigerate if you're not going to brine right away.

Put your rinsed, giblet-less bird in a large container (I use a big plastic tub in which to wash dishes), add your brine. Add also 1 gallon of heavily iced water and make sure your bird is immersed. Put the tub in the fridge. Let sit overnight; before you go to bed, flip the bird.

The next morning, dump the brine (keep the bird) and rinse the bird.

Alton then has you put some aromatics together - a cinnamon stick, some onion, apple, rosemary, thyme, water. Nuke the water, onion, cinnamon stick and apple in a microwave, then put those in the cavity of the bird, adding the herbs. Lube up the bird with plenty of vegetable oil, then put into a 500 deg. oven for 30 minutes.

Crank the heat down to 350 until the bird is done - I've got a 14 lb. bird this time, so it'll take about 2 hours and change. I don't stuff my bird, btw.

no but in all seriousness the turkey came out really good. Even about 2 hours after the white meat was still juicy.

Good for you. I'm sticking with the brining process -- after 40 years of roasting turkeys, I've never seen a process yield such consistently good results.
